In our house we are big salad eaters! We eat a salad as a dinner at least once a week. I love trying new recipes to “spice”it up a bit. There are so many options that I never thought about trying on the Fresh Express Recipe page – such as grilled cheese salad, I think my little monkey may be  a fan of that one! Have you ever added something “different” to your salad??

Using fresh fruit and nuts is a favorite ingredient of mine, so I wanted to try the Mixed Greens with Candied Pecans, Maytag & Basil Vinaigrette salad…

The naturally bright and sweet flavors of apple, grape and pecan balanced perfectly with savory Maytag blue cheese and Basil Vinaigrette— great during any season! Serves 4

Ingredients

Salad Ingredients:
Fresh Express 5 Lettuce Mix
1 honey crisp apple, thinly sliced
3/4 cup Maytag, crumbled (can substitute for any blue cheese)
1/2 cup grapes, halved
1/2 cup candied pecans

Dressing Ingredients:
1/4 cup champagne vinegar
1/2 cup blended oil
1 cup basil leaves
1 garlic clove, minced
1 tbsp fresh lemon juice 1 tsp Dijon mustard
2 tsp honey 1/4 tsp kosher salt
1/4 tsp freshly ground pepper
1 shallot, chopped

Instructions

1. Place greens into a large salad bowl.
2. Add the grapes, pecans, gorgonzola and apples.
3. Drizzle salad with desired amount of dressing (save remainder up to two weeks in refrigerator).
4. Sprinkle salad with Maytag and pecans

Dressing Recipe:  In a food processor, blend all ingredients, except for the oil. When all ingredients are well incorporated, slowly in a steady steam, add the oil.
